Fruit Shrubs

Not many people think of making a drink that includes vinegar. However, this simple mix of vinegar, fruit and sugar can make a tasty, refreshing beverage to combat the hottest days of summer.

Try it!

Fruit Shrub

  • 2 cups apple cider vinegar
  • 2 cups sugar
  • 2 cups fruit (I used frozen strawberries)

Mix the three ingredients together in a medium-size container that can be sealed. Mix it well, stirring until the sugar has dissolved. If the fruit is frozen, allow to sit, covered and at room temperature in the vinegar and sugar, for an hour. Then go back and mash the fruit into a slurry.

This will help it infuse the vinegar better.

Leave at room temp, covered, overnight.

Stir the mixture well, then strain the fruit, setting it aside for a fruit cobbler. Waste not, want not!

Mix 1/3 cup of the shrub into a tall glass with ice and seltzer or club soda. Adjust the syrup up or down according to taste.

Options: 

  • You can also drink this with just plain ice and water (I actually prefer it that way).
  • Add a shot of rum if you would prefer a more “adult” beverage.
