(makes 2 large loaves)
- 3 1/2 cups flour
- 4 tsp baking powder
- 1 tsp sea salt
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 cup plus 3 Tbsp butter, softened
- 1 and 1/3 cups sugar
- 4 eggs
- 3-4 ripe, mashed bananas
- 1 and 1/3 cups apricots, finely chopped
- 3/4 cup toasted chopped walnuts
- 1/2 cup crystallized ginger, finely chopped
Preheat oven to 350 degrees. Spray two 9×5 inch pans with nonstick spray.
In bowl, soft together flour, baking powder, salt, baking soda, cinnamon and nutmeg.
In stand mixer, cream together sugar and butter for three minutes. Add eggs and bananas. Add sifted dry ingredients and then fold in the apricots, ginger and nuts.
Divide batter into two pans and bake until brown and cooked through. About 60 minutes.
