Cantaloupe Vanilla Jam

  • 2 1/2 cups cantaloupe (peeled, seeds removed and chopped finely)
  • 1 1/2 cups sugar
  • 1 vanilla bean, split and scraped
  • 1/2 teaspoon lemon peel (or zest of one lemon)
  • 1 Tablespoon lemon juice
  • 1 package of pectin

Combine cantaloupe, sugar and vanilla bean pod and seeds in a non-reactive pot. Bring to a boil over high heat and cook for 8-10 minutes.

Add lemon zest, lemon juice and package of pectin. Return to a vigorous boil. Cook for an additional 3-4 minutes, until the bubbles look thick. Remove the vanilla bean pod and discard.

Makes three half-pint jars.
