Rose Petal Jam

  • 8 oz rose petals
  • 2 cups sugar
  • 4 1/2 cups water
  • 8 tbsp lemon juice (or the juice of one lemon)
  • 1 package of pectin
  1. Thoroughly rinse the rose petals
  2. Soak the petals in water for 2 hours or up to 3 days, drain.
  3. Spread petals out on a tray and sprinkle with some of the  sugar, chill in refrigerator overnight
  4. Combine water, remaining sugar and lemon juice in a saucepan and bring to a boil
  5. Stir in rose petals and pectin,  simmer for 20 minutes, then bring to a boil for five minutes
  6. Transfer to jars (follow water bath canning method) and allow to cool.

This ended up being just two pint jars of jam. I can add this to ice cream, or just spread it on toast as is!
