The brown sugar sold in stores is no longer made with molasses, so this is a step back to days gone by. Keep in mind that due to that fact, this brown sugar may taste a little different, more heavy molasses flavor, so I suggest you make a batch of light brown sugar and play with raising the level of molasses carefully. Also, I have found that brown sugar mixes up better in the warm months. I am not sure if this is a matter of temperature, or of higher humidity.
- 1 cup of sugar
- 1-3 teaspoons of unsulphured 100% molasses
Combine ingredients in a stand mixer for best results. Blend on medium high, stopping to scrape down the sides regularly. Mix until everything is an even brown color.
