My eldest is lactose intolerant and she kept eying my ice cream concoction with a mixture of sadness and longing. You don’t get much variety with dairy free ice cream flavors, so I decided I would figure out how to make some really tasty ones for her. Here is how I made dairy-free ice cream.
- 1 can coconut cream
- 1 cup coconut milk, unsweetened
- 2/3 cup sugar
- Choose flavor combination from below
Whisk ingredients (except for nuts, chocolate pieces, etc) together and add to ice cream maker. Process according to manufacturer instructions and add any nuts or chocolate near the end, when the ice cream is almost done firming up. Serve or store in freezer.
- 1/2 cup Andes mints
- 1 tsp spearmint extract
Chocolate Peanut Butter
- 1/3 cup peanut butter
- 1/4 cup unsweetened cocoa
- 1/2 cup mini semi-sweet chocolate chips
- 4 Tbsp instant coffee
- 1/2 mini semi-sweet chocolate chips
