Lemon Thyme Crisps

Ingredients:

  • 3 ¼ cups flour
  • 2 tsp baking soda
  • ½ tsp salt
  • 4 tsp finely chopped lemon or regular thyme leaves
  • 2 sticks (1 cup) butter
  • 1 ½ cups sugar
  • 2 ½ tbsp grated lemon zest
  • 1 egg
  • 3 tbsp lemon juice
  • 1 tbsp grated ginger
  • confectioner’s sugar for dusting
  1. Combine flour, baking soda, salt and thyme.
  2. In separate bowl beat together butter, sugar, & lemon zest until light & fluffy.
  3. Add egg, beating until combined well & add lemon juice & ginger. Add to flour mixture and beat until just combined.
  4. Halve dough and roll into logs on wax paper. Freeze the logs for about 20 minutes.
  5. Slice into ¼ inch ovals and bake 12 minutes at 350°. Dust with confectioner’s sugar
