Quiche

I love quiche. It is relatively quick and easy to make and tastes great. I often swap out bacon for ham, or kale or Swiss chard or collards for spinach. You can also use shredded cheddar if you prefer that over Swiss cheese.

Have fun with the crust as well. Add some spices!

Crust:

  • 1 1/4 cups flour
  • 1/3 cup lard or shortening
  • 1/2 tsp salt
  • 3-4 Tbsp cold water
  • 1/2 tsp garlic powder
  • 1/2 tsp parsley

Add together all ingredients except for water. Cut in the flour with the lard using a fork until the lard resembles small crumbles. Add water one tablespoon at a time and fluff lightly with a fork. Do this until mixture can be shaped into a ball.

Roll out on a floured surface into round in shape, carefully drape over rolling pin and place in glass pie plate.

Quiche Mix:

  • 7 eggs, beat together and set aside
  • 1-2 cups greens (spinach, collards, kale or Swiss chard)
  • 1 8-ounce package of Swiss cheese, grated
  • 1 cup diced ham or bacon
  • 1 cup mushrooms
  • 1/2 cup onions

Slice mushrooms and dice onions and saute in a small amount of butter until onions are translucent. Mix the greens, half of the Swiss cheese, the pork, and sauteed mushrooms and onions together in a bowl. Add black pepper and Cajun seasoning to taste and mix well. Pour into the pie crust and top with remaining cheese. Bake at 375 degrees Fahrenheit for 40 minutes.
