3-Bean Salad

  • 2 cups soybeans (shelled)
  • 1 can kidney beans, rinsed and drained
  • 1 can garbanzo (chickpeas) beans, rinsed and drained
  • 1/2 cup thinly sliced red onion (optional)
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 1 tsp lime peel (optional)
  • 1/4 cup lime juice
  • garlic powder (to taste)

Mix all the beans together. In a small bowl, whisk together seasonings, olive oil, and lime juice. Pour over bean mix and allow to chill in refrigerator for an hour or up to 24 hours to allow flavors to mix. Stir well before serving.
