Before I give you this recipe, I must add that I’m hundreds of miles away from any ocean and I recommend fresh rather than frozen, but hey, with that said and using frozen rather than fresh, it still came out quite tasty!

  • 2 packages of frozen seafood medley (approx. 2 lbs. total)
  • 2 – 28 oz cans of stewed tomatoes and juice
  • 4 tsp of Better Than Bouillon clam base
  • 2 cups water
  • 2 cups red wine (white wine will do in a pinch)
  • 2 onions, chopped
  • 2 bell peppers, chopped
  • 4 celery stalks, chopped
  • 2 Tbsp olive oil
  • 1/2 tsp pepper
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1/2 tsp cayenne
  • 3 bay leaves
  • 1/4 tsp Italian seasoning

Saute the onions, bell peppers, and celery in olive oil over medium-high heat until soft and fragrant. Add tomatoes, clam base, water, wine and use an immersion blender to mince the tomatoes and vegetables into more of a broth. Add the seasonings and the seafood and cook over medium-low heat for 30-45 minutes. Adjust seasonings if necessary, serve and enjoy!
